Creole Meat Loaf Recipe
1 1/2 pounds ground beef
1 small onion, chopped
1 large green pepper, finely chopped (remove seeds)
2 small dill pickles
1 pimiento (or jar of sliced pimientos)
1 1/4 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon paprika
6 slices bacon
6 - 8 oz. tomato juice
Mix the ground beef with the chopped onion, finely chopped green pepper,
and pickles cut in small pieces. Season with the salt, pepper, and paprika.
Grease a loaf pan and place half the mixture in it, pressing it down well.
Then cut the pimiento in long thin strips and arrange over the meat.
Place the rest of the meat over the pimiento, and bake at 450°F. for 35 minutes.
Ten minutes before removing from the oven, place the bacon strips across the top
and permit them to bake until crisp.
Serve the meat loaf with the bacon as a garnish and make a gravy of the fat in the pan
in the usual way, only substituting strained tomato juice for the usual water.
