Turkey Tetrazzini Recipe
Serves 3 or 4
1/2 cup margarine (1 stick)
1/2 cup diced onion
1 cup diced celery
1 cup diced green pepper
1/4 cup flour
1 cup milk
1 Tablespoon Worcestershire
2 teaspoons salt
1 Tablespoon lemon juice
2 cups chopped, cooked turkey (or chicken)
8 to 10 oz. sharp Cheddar cheese
8 oz. cooked spaghetti
1/2 cup Parmesan cheese
In a 2 quart saucepan, melt the margarine.
Add onion, celery, and green pepper and saute until tender.
Add the flour and stir until well mixed.
Add milk, Worcestershire, salt, and lemon juice and stir until thickened.
Add Cheddar cheese and chicken and remove from heat.
Stir until cheese is melted.
Mix in spaghetti and place in greased casserole dish.
Sprinkle with Parmesan cheese and bake for 30 minutes at 350° F.
